Sea bean
If you've ever tasted a micro green salad, you've most likely thought it was made with sea beans. Sea beans are actually edible plants, a subspecies of the broader bean family. The pods of sea beans are about the size of a palm and contain a few bean-like seeds. Growing these plants is similar to growing any other microgreen. Before you plant them, soak them overnight in soil and cover them. They'll grow very quickly and require a little water. Micro green salads are fast to prepare. They go well with other salad ingredients, such as tomatoes, cucumbers, strawberries, and pea shoots. They also go well with a light vinaigrette made of olive oil, balsamic vinegar, and sea salt. The Green Goddess Dressing keeps for about a week in the fridge. The salads taste best if they're served chilled and paired with a dish with roasted carrots and chickpeas.
