Gone are the days where we could fulfill our 2 A.M. cravings with 2-minute noodles, Maggi. The ban on Maggi has affected many, especially those who live away from home and can’t gulp in the food that their landlady/canteen makes.
Most of the college students are broke. With empty pockets and nothing to shell out, there is an urgent need for some quick recipes that aren’t difficult to prepare and can stand where Maggi once stood.
Here is a list of some super easy recipes that only require a little patience :
1. Nachos and cheese

This recipe requires you to buy mayonnaise or cheese. If you are lucky enough to have an oven where you stay then this recipe is a savior. All you have to do is shred some cheese over your nachos and let it melt in the oven.
If you don’t have an oven then mayonnaise would do the task for you.
Buy some salsa and you’re good to go.
Also, you can try innovating by throwing a variety of flavors in it.
2. Tofu scramble
Image source:http://meckids.com/wp-content/uploads/2015/02/Tofu-Scramble.jpgMaking egg scramble is a tedious task. Substitute eggs with tofu and let the magic happen. It would taste the same and is as healthy. Tofu is easily available in the market. All you have to do is buy it.
Step 1: Clean the tofu and use paper napkins to absorb the moisture.
Step 2: Take 3-4 tbsp soya sauce, 1/4 tsp cumin seeds(jeera), 1/4 tsp turmeric, 1/4 tsp garlic powder, 1/2 tsp salt and mix well.
Step 3: Marinate the pieces. Put them in the mixture and stir.
Step 4 : Put some oil in a pan and toss the pieces until they turn brown. It would take 10 mins and you have to keep flipping the pieces.
Step 5 : Take some chopped vegetables and shallow fry them in another pan with soya sauce.
Step 6 : Put the tofu mixture into the vegetable mixture and cook for a minute.
Tada! A super-delicious dish is ready. You can improvise by adding your own flavors.
3. Okra fries
Okra/ ladyfingers/ bhindi is liked by many. Crispy okra has its own appeal. Not only is it easy to make, it is also one of the healthiest snacks.
Step 1: Wash the okra properly and cut it into halves.
Step 2: Take rice flour, 1/2 tsp salt, 1/4 tsp cumin powder, 1/4 tsp turmeric, 1/4 tsp red chilli powder, 2 tsp oil in a bowl and mix well. You can add whatever spice you want to.
Step 3 : Put some oil in a pan for heating.
Step 4: Toss the okra into the mixture until it is coated well.
Step 4: Put the coated okra into the pan and deep fry it.
Step 5 : Put the fried okra on paper napkin so that the extra oil gets absorbed.
Your crispy okra fries are ready!
4. Steamed brownie
This is for all those with a sweet tooth. You don’t even need a microwave for this one. You need a stove, a baking tray or anything made up of Aluminium and a skillet (kadhai).
Step 1: Grind 1 packet of Parle Hide & Seek (if not available then any choco-chip biscuit/cookie would do) and 2 packets of Parle-G together in a mixer.
Step 2: Put 6 tea spoons of castor sugar (powdered sugar) in the mixture.
Step 3: Put 1 tsp of baking powder and 1 tsp of cocoa powder in the mixture and mix well.
Step 4: Put 1 trial packet of Hershey’s chocolate syrup in the mixture.
Step 5: Keep pouring little water until it becomes a thick paste like batter Do NOT use a lot of water, we need it thick.
Step 6: Grease the aluminium container and put the mix in it.
Step 7: This is a little tricky. Take the skillet and fill it with water. Put a stand in it to keep the aluminium container. Now put the container and cover the skillet. Let it steam on the stove.
Check after 30 minute by inserting a fork in it. If it comes out clean then voilà! It’s ready.
5. Tomato cheese salad
This is for the lazy ones out there. You don’t even need to cook this one.
Step 1: Take some tomatoes and soft mozzarella cheese and cut them into circular slices.
Step 2: Stack them together with tomato at the bottom and cheese on the top. Top it with basil leaves.
Step 3: Garnish it with salt, pepper, oregano and some vinegar.
